O pacote “tostinha”, como o próprio nome indica, tem o objetivo de determinar a evolução do HMF antes e depois do aquecimento do mel. O aquecimento do mel tem o objetivo da descristalização do mel o que pode elevar o valor do HMF. É necessário ter em atenção que qualquer processo de aquecimento aumenta a probabilidade de ultrapassar o limite legal de HMF (40 mg/kg). Se este valor for ultrapassado, o mel não pode ser comercializado ao consumidor final, e passa a ser canalizado para “mel industrial” (padarias, industria alimentar).
